Its finals season. So for all you stress bakers or stress eaters here is a round up of some alternative desert ideas that cut down on the dairy and therefore food footprint, or that rely on ingredients you can get still get locally, or may have stored up for the winter months!
Cinnamon Sweet Potato Truffles
With a blender and a few easy steps you can make these delights! find out how here.
Chocolate Peppermint Walnut Truffles
Again another quick and easy recipe. Grab some fair trade cocoa powders for a socially sustainable boost! Check it out. Now there has been growing concern over coconut oil’s growing popularity and if it could start to become linked to deforestation (a la palm oil). There is little supporting such fears (yet) but other ingredients you could use as shortening are lard or schmaltz. These are not vegetarian or vegan friendly, or even low calorie, but they do have the advantage of using more of the animal produce you buy instead of allowing it to go to the trash. Bonus since they are made from animal fats there are no hydrogenated oils.
Vegan Dark Chocolate Truffles
No blender needed! Again make sure to swipe some fair trade chocolate to make it more socially sustainable. Now if you want to smash the vegan bit and sub out the coconut oil see the Chocolate Walnut truffles for how to do so using cooking left overs.
Black Bean Brownies
It sounds odd but promises a rich and thick delicious bite! See here.
Bourbon Baked Apples
These seem ridiculously delicious, and are definitely capable of of being amazing without the booze. Pull a few apples out of your pantry and see here!
Vegan and delicious whats not to love? See the minimalist baker for how.
